Chef Abner Lowell Cauilan
Co-Founder and Program Director

Chef Lowell has spent almost 2 decades of his professional life dedicated to the culinary industry. His humble beginnings as a demo chef in 1997 inspired him to take the practice to the next level. He was the first ever academic scholar of a pioneer culinary school in our country and it opened the doors of opportunity for him. Through passion and hardwork, he progressed from Sous Chef to Executive Chef in various restaurants including C2 Restaurant, Manila Polo Club and MERALCO’s executive dining and its subsidiary, MMLDC.

A true student of the art, Chef Lowell himself still immerses himself in continuing education with his training and travels all over Asia to learn first -hand our region’s rich culinary heritage. He also helped numerous start up restaurants from around the country from Manila, Rizal up to the southern part of Boracay, Tacloban and General Santos City. Notable among them is Marison’s Restaurant which saw its success in years.

Chef Lowell is also a consultant of CDO Foodsphere. He helps develop product application of their world-class products.He also manages his own Catering Firm, Mrs Cheffy and Company and recently opened up the Flat Bread concept which is a hit among food parks nowadays.

Chef Catherine Ong
Co-Founder and CEO

Chef Catz is a young and dynamic chef who set her sights in establishing a culinary institution taking inspiration from her own experiences as a student herself and as an entrepreneur. She graduated with a degree in Management and immediately pursued further training in Culinary Arts and Technology Management where she was regarded as one of the excellent students of her batch. She practiced her craft at C3 Events Place and Tito Chef restaurant where she demonstrated her culinary and restaurant management skills. Chef Catz imparts to PACE students the business management skills she acquired in the industry.

Ms. Fiona Flores
Co-Founder and Marketing Head

Fiona prides herself in being a self-made entrepreneur. She has been working in the Hotel and Restaurant Industry for more than a decade at different levels of engagement. She started her career in hotel sales where she learned the fundamentals of customer relations and then moved on to manage a team in banquet sales of one of the top corporations of our country. This inspired her to venture into her own catering business, which she continues to manage until now. Fiona is one of the mentors for the Entrepreneuship subjects of PACE, sharing her wealth of experience in the aspect of Catering Management.

This inspired her to venture into her own catering business, which she continues to manage until now. She also started Flat Bread concept which a hit among food parks nowadays.

Fiona is one of the mentors for the Entrepreneurship subjects of PACE, sharing her wealth of experience in the aspect of Catering Management and Marketing. Through it ll, she selflessly devoted herself in sharing her knowledge and experience as one of the mentors of Kalye Negosyo and Mentor Me which are both affiliate programs of DTI and Go Negosyo.

Mark Anthony Catarroja, M.Ed.
Co-Founder and School Administrator

Mark Catarroja has 17 years of experience in the academe. He worked with different educational institutions as a teacher, consultant and later on, as a school administrator. An educator by profession, he later on finished his Masters in Education, Major in Educational Administration from the Ateneo De Manila University.

His exposure and experiences in Miriam College and Ateneo De Manila helped him manage successfully the different tech-voc institutions he served. As the School Administrator of PACE, Mr. Catarroja is responsible for ensuring the seamless delivery of school services and operations of the school.

 


Chef Jose Amadeo “Menoy” Gimenez
Culinary Education Pioneer, Restaurateur and PACE Parañaque Institute Director

Chef Menoy is one the most respected chefs in the industry and considered as one of the pioneers of culinary education in our country. He is a mentor of mentors. His decades of work as a culinary educator, a dedicated chef and a prime-mover in the culinary industry have helped elevate the quality of culinary education in our country and inspire thousands of culinary students through his initiatives. Chef Menoy is also a successful restaurateur and entrepreneur as showcased in his latest restaurant, Tito Chef. Chef Menoy is a graduate of the New York Restaurant School and a consultant to many establishments in the industry.

Mr. Jorge Wieneke
Food Business and Franchising Mentor and Marketing Consultant

Jorge Wieneke is a long-time veteran and advocate of entrepreneurship in the food industry. His career started thru his creation of Potato Corner, the country’s very first flavored French Fries that also revolutionized food cart selling in the malls.

He is also one of the founding members of the Association of Filipino Franchisers, Inc. (AFFI) and an active partner and angelpreneur of Go Negosyo one of the resource speakers of Ateneo Graduate School of Business and well respected Marketing Guru.

Currently, he is the president of Tokyo Tempura, one of the most recognized, original unlimited Tempura concept in the country. It has experienced exponential growth through the years but what Jorge is more proud of is the many small entrepreneurs he helped through his businesses.

Jorge is the Program Director of PACE for Entrepreneurship which offers program to educate and inspire future chefpreneurs.


Chef Monicca Dechavez
Culinary Instructor

Chef Nikki is a rare combination of a chef who can competently do cooking and baking. She has been in the practice for a decade now and further honed her training by working in different countries like in New Zealand and the US. Chef Nikki was exposed to the highest possible standards in the profession that enabled her to move up in the ranks and her recent stint is her work as a head chef of an upcoming hotel’s restaurant. Chef Nikki inspires the students of PACE that through training and constant practice, your passion can turn into a career.

Chef Mayonee Pongos

Chef Mayonee is a true student of the profession. She graduated cum laude in Food Technology and later on pursued professional training in Culinary Arts and Baking and Pastry Arts. While in the culinary school, she was an excellent student in class and even in competitions both here and abroad. Her excellent performance jump started her career in the industry. She started as a chef de partie until she worked her way up while working in different restaurants. She is now the Head Pastry Chef at Tito Chef’s. Chef Mayonee will bring in her standard of excellence as well as her experiences in inspiring our students to be the best in the field of Baking and Pastry Arts.

 


Chef April Martinez-Aluning
Chef Instructor

Chef April has a decade of experience in the culinary industry both as a practitioner and an educator. Her experience in Sofitel Philippine Plaza inspired her to teach culinary arts to aspiring students. She engaged herself in further trainings and competitions both local and abroad that served as her continuing education. Chef April also serves as consultant to different institutions and she brings her wealth of experience at various levels to the aspiring culinary students of PACE.

Chef Kevin Christian Ereñeta, CHS, MS

Chef Kevin presents extensive knowledge in the field of Food Science and Food Safety. He is a graduate of HRM, specialization in Culinary Arts and has a Master’s Degree in Food Science from the University of Sto. Tomas. Chef Kevin has diverse work experience from Jumeirah Beach Hotel in Dubai, Diamond Hotel and recently, Café Ilang-Ilang of the Manila Hotel. Chef Kevin brings a rare combination of culinary practice and expertise in the field of food safety and sanitation.

Chef May Martinez
Chef Instructor

Chef May has an extensive experience in the field of Baking and Pastry Arts as well as exposure and training in Culinary Arts. Her work experience in various hotels such as Sofitel Philippine Plaza, Intercontinental Hotel Manila and her recent stint in F1 Hotel Manila plus her Culinary and Baking and Pastry education both locally and training abroad makes her an ideal mentor to aspiring students of PACE. She brings with her more than a decade of industry practice and teaching experience.
